No. Once an order is marked Fulfilled in Shopify, editing is no longer available - no matter how much time is left in the edit window.
What this means:
The edit window is a maximum, not a guarantee - fulfilling early ends it early.
To give customers the full window, avoid fulfilling those orders until it closes.
